It all started back in 2014, when our founder Dan, a native New Yorker, moved to the Cotswolds after working in finance in London for many years. Seeking to leave behind that world and spend more time in the picturesque countryside of the Cotswolds with his family, it eventually dawned on him that he could combine his love of whisky with his desire to start a new business. Having found a derelict site near his house, he set about building a distillery and a team to run it, and the doors of the Cotswolds Distillery opened in July 2014. Located just outside the beautiful village of Stourton, we welcome over 30,000 people to our distillery each year, offering visitors the chance to get up close to our craft processes and passion for creating outstanding natural spirits.
Although we also produce Cotswolds Dry Gin and a whole array of small batch gins and liqueurs, whisky production is at the heart of everything we do at the distillery. Our award-winning Cotswolds Single Malt Whisky is the first single malt ever distilled in the Cotswolds region and has had quite the debut since its inaugural release in late 2017.
What makes our Single Malt Whisky so unique? It’s truly lovingly crafted. We are committed to only using locally grown barley, which is traditionally floor malted by hand using techniques that date back hundreds of years at Britain’s oldest working maltings at Warminster. What’s more, we run the fermentation process for more than 90 hours, and only select the purest section of the spirit run during distillation known as the ‘heart cut’, ensuring that the end result is a light and fruity spirit.
Aged in first-fill Kentucky ex-Bourbon barrels and highly active shaved, toasted and recharred American Oak red wine casks, the resulting whisky is rich, fruity and sippable. With delicious notes of peaches and apricots, rich malt and butterscotch, this is an extremely approachable and balanced single malt.
Picking up 13 medals and awards in less than 18 months, including Gold for ‘English Single Malt’ at the World Whiskies Awards 2019, it has challenged preconceptions about what young, English whisky can achieve. Our flagship single malt has also received some significant coverage from influential figures such as Oz Clarke, Phillip Schofield and drinks writer Alice Lascelles, underlining its credibility.
